For the first time, Juno the Bakery shares a selection of the recipes that have made the bakery an international destination in Copenhagen.

The book offers a thorough introduction to sourdough, laminated dough, and their world-famous cardamom buns, with recipes for breads, traditional Danish cream buns, croissants, and seasonal tarts. In the Christmas chapter, you will find recipes such as Lucia buns, French nougat, and traditional almond ring cake.

Juno the Bakery is run by the Swedish baker Emil Glaser and his wife Nina Schmiegelow. In 2017, they opened the doors to a local bakery at Århusgade 48 in Copenhagen. Their goal is simple: the best ingredients, careful craftsmanship, and clean, delicious flavors. Petra Kleis has documented it all with atmospheric photographs from the bakery and of the recipes.
